Cacio e pepe
A cozy, creamy, and fragrant five-ingredient pasta for an easy meal on a chilly night inside.
Ingredients
- Box of fettucine
- Stick of unsalted butter
- Parmigiano reggiano cheese, 1 cup, grated
- Romano cheese, 1 cup, grated
- Pepper, fresh ground
Method
- Start cooking the pasta in salty water.
- Divide butter into eighths, place into mixing bowl, blanket with ground pepper.
- Grate cheese into separate bowl, put some aside for garnish.
- When pasta is done, mix pasta into the peppered butter until the butter is melted.
- Gradually mix cheese into the buttered pasta, adding more when mixture is incorporated, and occasionally adding a spoonful of pasta water to maintain creamy texture.
- Plate the pasta, garnish with remaining grated cheese and pepper.
